MILAN, ITALY, September 22, 2025 /EINPresswire.com/ -- For a week, from September 29 to October 4, Milan becomes the capital of gastronomic culture with the Congusto Open Week. The initiative stems from Congusto Institute, the first cooking school-campus in the city that for over twenty years has been training cooks, pastry chefs, bakers and dining room managers, accompanying over 90% of its graduates towards a job: founded by Federico Lorefice and Daniel Stoico, the Institute combines technical-scientific rigor and creativity, offering certified courses and a campus equipped with professional laboratories, auditorium and educational garden.
With the Open Week, Congusto brings its knowledge beyond the walls of the school to tell
the story of contemporary gastronomy in a direct and participatory way through meetings, tastings and moments of discussion open to the public, scheduled from 12 to 20 at the Congusto Hub in via Malpighi, and a series of activities made possible by a network of partner locations in different parts of the city.The calendar opens on Monday with a dialogue on identity and communication in catering thanks to the contribution of Gianluca Biscalchin, Lydia Capasso and Roberto Carcangiu, and with a tasting of international pastries at Naëve.
On Tuesday it is the turn of a refined cocktail pairing at Rita's Tiki Room, an opportunity to discover the role of spirits in the kitchen.
On Wednesday, in collaboration with Apertissimo by Tuorlo and chef Viviana Varese, we talk about inclusion in the world of food, and we celebrate the Italian dessert par excellence with the presentation by Gelsomina of the book Il Tiramisù published by Italian Gourmet with the participation of master pastry chef Marco Pedron, educational coordinator of the pastry area of Congusto Institute.
On Thursday, the audience explores the power of images in Pop-Eye Studio's panel on the graphic representation of food, while Le Creuset hosts a meeting dedicated to cocotte bread.
On Friday, the focus shifts to plant-based cuisine, with a talk on new trends and a coffee tasting led by experts.
The week ends on Saturday on the campus in Via Davanzati with a Breakfast Open Day by Gelsomina, visits to the laboratories and moments of open classroom with the chefs, to experience the training environment firsthand. In the afternoon, the artist Paolo Rui customizes shopping bags with illustrations inspired by food, transforming the memory of the event into an art object.
The initiative will be accompanied by an urban communication campaign with billboards in Porta Venezia, to underline the link with the city and the desire to dialogue with a wide and transversal audience.
The Congusto Open Week thus becomes a real journey into culinary excellence, an opportunity to get to know the masters who train the professionals of tomorrow and discover how gastronomic culture can be a bridge between training, creativity and professional future.
